Mexican Quinoa Salad
I have always been a huge fan of mexican food — it’s hard to beat those fresh and complimenting flavors of tomatoes, lime, and cilantro. More please!

This is a great dish that I love eating by itself or paired with great protein sources like grilled chicken, fish, or steak. Some of my favorite benefits of this dish are:

Quinoa is a great grain alternative that is gluten-free. Once you cook and fluff the the quinoa, the only thing left is to add your chopped veggies, corn, beans, and lime.
I love incorporating essential oils into my cooking. I’ll do this at times in alongside the herbs or in place of the herbs. You’ll find that the essential oil is more potent than just using the herb form, so it just depends on the recipe. In this recipe I chose Lime essential oil for the incredible added flavor and it’s health benefits: supports digestion & detoxing!
TIPS & TRICKS
If you’re planning to have left overs, add the avocado in separately with each time you eat it to keep it fresh. Avocados brown quickly once cut.
Slowly add in the Lime essential oil. It’s better to start with a couple drops and add more as desired for flavor.
Rinse the quinoa with water and use a fine strainer before adding to instant pot/stovetop pot.
Use filtered water.
